Crispy Bicol Express
Crispy pork belly is served with a rich, spicy Bicol Express sauce.

Ingredients for Crispy Bicol Express
- 3 lb pork belly
- 1 (45 g) pack Knorr Ginataang Gulay Mix
- 3 to 4 long green peppers, sliced
- 8 Thai chilies, chopped
- 3 tbsp alamang
- 1 thumb-sized ginger, cut into thin strips
- 1 medium onion, chopped
- 3 garlic cloves, chopped
- 1/4 tsp ground black pepper
- 3 to 4 cups cooking oil
- 8 cups water
- Salt, for rubbing the pork
How to cook Crispy Bicol Express
- 1.Bring the water to a boil in a pot. Add pork belly and simmer for 30 minutes; remove and cool slightly.
- 2.Stir Ginataang Gulay Mix into the cooking liquid. Add onion, ginger, garlic, long peppers, Thai chilies, alamang, and pepper.
- 3.Boil the sauce, then cook 3 minutes after adding the chilies. Simmer until reduced by half; set aside.
- 4.Rub pork with salt and rest 10 minutes. Heat oil to 330°F and deep-fry pork for 8 minutes.
- 5.Rest pork 5 minutes, then fry again for 3 to 5 minutes until deeply crisp. Slice and spoon sauce over it.
