Sinugno

Sinugno gently braises grilled tilapia in fragrant coconut milk with bok choy.

Ingredients for Sinugno

  • 4 tilapia, cleaned and scaled
  • 3 bunches baby bok choy or Shanghai bok choy
  • 3 cups coconut milk
  • 1 thumb-sized ginger, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 1 onion, thinly sliced
  • 3 tablespoons fish sauce
  • salt, to taste
  • freshly ground black pepper, to taste
  • oil, for sautéing

How to cook Sinugno

  1. 1.Preheat a charcoal grill and grill tilapia until marked and cooked; set aside to cool slightly.
  2. 2.Heat a little oil over medium heat and sauté ginger, garlic, and onion until fragrant.
  3. 3.Add coconut milk, season with salt and pepper, and bring to a gentle simmer.
  4. 4.Carefully add grilled tilapia and simmer until heated through and infused with coconut milk.
  5. 5.Season with fish sauce, add bok choy, and cook for 2 minutes until slightly wilted; serve with rice.
