Lomo Lomo
A rich pork-and-offal stew finished with chives and a silky pig’s brain or spinal-cord garnish.

Ingredients for Lomo Lomo
- 500 g pork belly, cut into small cubes
- 150 g pork liver, cut into small cubes
- 1/2 pig’s brain or 1 cup pig spinal cord
- 3 cups pork stock or water
- 1/2 bunch chives, chopped
- 6 cloves garlic, minced
- 3 small shallots, finely chopped
- Pork lard, for sautéing
- Fish sauce, to taste
- Freshly ground black pepper, to taste
How to cook Lomo Lomo
- 1.Boil the pig’s brain or spinal cord in 1 cup water until cooked; drain, cool, cube, and set aside.
- 2.Heat pork lard in a pot over medium heat. Fry garlic until golden, then sauté shallots until fragrant.
- 3.Add pork belly and brown lightly on all sides. Add pork liver and cook for 2 minutes.
- 4.Pour in pork stock, cover, bring to a boil, then simmer on low for 20 minutes, until pork is tender.
- 5.Stir in chives and the cooked brain or spinal cord. Cover and cook for 1 minute; season with fish sauce and pepper.
