Ginisang Sardinas (Sautéed Sardines)
Canned sardines become a quick, fragrant rice companion with tomato, citrus, and optional siling labuyo.

Ingredients for Ginisang Sardinas (Sautéed Sardines)
- 11 oz sardines in tomato sauce, about 2 small cans
- 1 medium red onion, sliced lengthwise
- 3 cloves garlic, crushed
- 1 tbsp flat-leaf parsley, chopped
- 1 medium ripe tomato, chopped
- 2 tsp lemon or calamansi juice
- 2 siling labuyo (bird's-eye chilies), optional
- 1 tsp fish sauce or salt
- 1/2 tsp ground black pepper
- 2 tbsp cooking oil
How to cook Ginisang Sardinas (Sautéed Sardines)
- 1.Heat oil in a pan over medium heat. Sauté garlic and onion until the onion softens.
- 2.Add tomato and cook for 3 minutes until juicy.
- 3.Add sardines with their tomato sauce and the siling labuyo; bring to a gentle boil.
- 4.Cook over low to medium heat for 5 minutes, adding a little water only if the pan becomes dry.
- 5.Stir in lemon or calamansi juice, pepper, and fish sauce or salt; cook 1 minute.
- 6.Transfer to a bowl, garnish with parsley, and serve with steamed rice.
