Fish Balls

These homemade Fish Balls have a springy fish paste center and a crisp fried finish.

Ingredients for Fish Balls

  • 500 g cold or slightly frozen fish fillet, cut into pieces
  • 1 tablespoon onion powder
  • 1 teaspoon garlic powder
  • 2 teaspoons salt, or to taste
  • 1 teaspoon sugar
  • 1 teaspoon ground white pepper
  • 1 tablespoon oil
  • 1/2 cup flour
  • 1/2 cup potato starch, tapioca starch, or cornstarch
  • 1 teaspoon baking powder
  • 1 large egg white
  • 1/2 cup ice-cold water
  • Oil, for deep-frying

How to cook Fish Balls

  1. 1.Process fish with onion powder, garlic powder, salt, sugar, pepper, oil, flour, starch, baking powder, and egg white.
  2. 2.Gradually add ice water while processing for 2 to 3 minutes, until the mixture is smooth and homogeneous.
  3. 3.Oil one hand and squeeze small balls through a thumb-and-finger opening; use a spoon to drop them into 40°C lukewarm water.
  4. 4.Transfer balls to gently simmering water, never a rolling boil, and cook 20 minutes. Drain in a colander.
  5. 5.Cool before freezing, or deep-fry until crisp and serve with fish ball sauce.
