Shrimp Pancit Canton
Shrimp Pancit Canton is a quick, savory noodle stir-fry loaded with crisp vegetables.

Ingredients for Shrimp Pancit Canton
- 1 lb medium or large shrimp, deveined and peeled
- 16 oz Pancit Canton noodles
- 1 cup baby bok choy, chopped
- 1 cup Napa cabbage, chopped
- 1/2 small red bell pepper, cut into strips
- 1/2 small yellow bell pepper, cut into strips
- 1/2 small green bell pepper, cut into strips
- 1 medium yellow onion, sliced
- 2 1/2 cups chicken broth
- 2 tablespoons oyster sauce
- 1 teaspoon garlic powder
- Salt and ground black pepper, to taste
- 3 tablespoons cooking oil
How to cook Shrimp Pancit Canton
- 1.Season shrimp with garlic powder, salt, and pepper; rest for at least 10 minutes.
- 2.Heat 2 tablespoons oil in a wok over medium-high heat. Fry shrimp 1 minute per side; remove.
- 3.Add remaining oil and stir-fry onion and bell peppers for 2 minutes; add bok choy and Napa cabbage for 2 minutes, then remove.
- 4.Bring chicken broth and oyster sauce to a boil in the wok. Add Pancit Canton, tossing every minute until liquid is absorbed.
- 5.Return vegetables and cook 2 minutes. Add shrimp, season to taste, and cook 2 to 3 minutes before serving.
