Menudong Nagcarlan
Menudong Nagcarlan turns tender tripe and vegetables into a creamy peanut-rich stew.

Ingredients for Menudong Nagcarlan
- 600 g beef tripe, cleaned, pre-cooked, and cubed
- 2 small chayote, cubed
- 150 g green beans, cut into short pieces
- 1 large potato, cubed
- 1 large carrot, cubed
- 1/4 cup cream
- 2 heaping tablespoons peanut butter
- 1 medium red onion, diced
- 2 cups chicken stock
- 6 cloves garlic, minced
- 2 bay leaves
- Freshly ground black pepper, to taste
- Fish sauce, to taste
- Oil
How to cook Menudong Nagcarlan
- 1.Heat oil in a pot and sauté garlic and onion until fragrant.
- 2.Add tripe and brown on all sides. Add stock and bay leaves, bring to a boil, then simmer on low for 25 minutes.
- 3.Add potato, carrot, chayote, and peanut butter; simmer over medium heat for 15 minutes.
- 4.Add green beans and simmer 5 minutes. Stir in cream, season with fish sauce and pepper, and serve.
