Pork Sinigang sa Kamias
Pork Sinigang sa Kamias is a bright, sour pork soup layered with fresh vegetables.

Ingredients for Pork Sinigang sa Kamias
- 2 lb pork belly (liempo)
- 4 taro, peeled
- 1 bunch kangkong, cleaned and chopped
- 2 medium tomatoes, quartered
- 8–10 string beans, cut into 2-inch pieces
- 1 medium onion, quartered
- 1 Chinese eggplant, sliced
- 6–8 okra
- 12 kamias (bilimbi)
- 2 long green peppers
- 6 cups water
- 2 tbsp fish sauce (patis)
How to cook Pork Sinigang sa Kamias
- 1.Bring water, tomatoes, onion, and kamias to a boil.
- 2.Add pork, return to a boil, cover, and simmer for 30 minutes.
- 3.Add taro and long green peppers; cover and simmer 30 minutes more, until pork is tender.
- 4.Stir in fish sauce.
- 5.Add okra, string beans, and eggplant; cook for 5 minutes.
- 6.Add kangkong, cover, turn off heat, and let residual heat wilt it before serving.
