Binagoongan
Binagoongan is tender pork belly simmered in a savory, tangy bagoong sauce.

Ingredients for Binagoongan
- 1 kg pork belly, cubed
- 1/2 cup white vinegar
- 1/4 cup water
- 4 tbsp bagoong
- 5 cloves garlic, minced
- 1 red onion, finely chopped
- 2 large tomatoes, chopped
- 1 tbsp sugar
- 3 bay leaves
- 6 green finger chillies
- Freshly ground black pepper, to taste
- Oil, for cooking
How to cook Binagoongan
- 1.Heat oil in a pot and brown pork on all sides; remove and set aside.
- 2.Sauté garlic and onion until soft, then stir-fry tomatoes until softened.
- 3.Return pork to the pot. Add vinegar, bay leaves, and water; simmer 45 minutes or until tender.
- 4.Stir in bagoong, sugar, and finger chillies. Cook until the sauce reduces.
- 5.Season with freshly ground pepper and serve.
