Kalamay Lansong
Kalamay Lansong is a soft steamed coconut rice cake finished with golden latik.

Ingredients for Kalamay Lansong
- 2 cups glutinous rice flour
- 3/4 cup sugar
- 1 can coconut milk
- 1 can coconut cream
- 1 banana leaf, about 10 x 10 inches
How to cook Kalamay Lansong
- 1.Simmer coconut cream in a nonstick pan over medium heat, stirring occasionally, until oil separates and curds turn light brown. Cool the latik.
- 2.Warm banana leaf over low heat until pliable. Line an 8-inch, 2-inch-deep round pan and grease it with latik oil.
- 3.Whisk glutinous rice flour, coconut milk, and sugar until smooth; pour into the prepared pan.
- 4.Steam over medium heat for 20 to 25 minutes with the lid wrapped in a clean towel, until a skewer comes out clean.
- 5.Cool, unmold, top with latik, and cut into squares.
