Molo Soup
Molo soup is a comforting Iloilo-style dumpling soup with pork-filled wontons, chicken broth, shrimp, annatto, and toasted garlic.

Ingredients for Molo Soup
- 2 lbs ground pork
- 2 lbs chicken
- 1 1/2 cups water chestnuts, minced
- 6 tablespoons fish sauce
- 1 tablespoon salt
- 1 cup shrimp, sliced, chopped, or minced
- 1/2 cup annatto seeds, soaked in 3/4 cup water
- 1 cup minced onions, divided
- 2 packs wonton wrappers, about 100 pieces
- 1/2 cup minced green onions, plus more for garnish
- 4 cloves garlic, minced
- 1/2 tablespoon ground black pepper
- 1 raw egg
- 1/4 cup toasted garlic, for garnish
- 4 tablespoons cooking oil
- 12 cups water, divided
How to cook Molo Soup
- 1.Boil chicken in 8 cups water for 40 to 60 minutes until tender; remove chicken and reserve the stock.
- 2.Mix ground pork, water chestnuts, green onions, 3/4 cup onions, egg, salt, and pepper until evenly combined.
- 3.Put a spoonful of filling on each wonton wrapper, moisten edges, fold, and seal into dumplings.
- 4.Shred or chop cooled chicken meat, discarding bones.
- 5.Heat oil in a casserole; saute garlic and remaining onion, then add chicken and cook 3 to 5 minutes.
- 6.Add fish sauce, strained annatto water, chicken stock, and remaining 4 cups water; bring to a boil.
- 7.Add shrimp and cook 1 minute, then add dumplings and simmer over low heat 12 to 18 minutes until cooked through.
- 8.Serve hot with green onions and toasted garlic.
