Carneng Asada
Carneng Asada is grilled marinated beef served with a light citrus sauce.

Ingredients for Carneng Asada
- 1 kg beef nape, sirloin, or top round, thick-cut
- 1/2 cup olive oil
- 1/3 cup dayap juice or lemon juice
- 1 spring fresh parsley, finely chopped
- Salt, to taste
- Reserved marinade
- 1/4 cup rice flour
- 1 1/2 cups water or beef stock
- Fried potatoes, optional
- Fine salt, for finishing
How to cook Carneng Asada
- 1.Combine olive oil, dayap juice, and parsley. Coat beef, then marinate at least 6 hours or overnight, turning occasionally.
- 2.Heat charcoal or a grill until hot. Grill beef to medium-rare or medium, brushing with reserved marinade to keep it moist.
- 3.Rest the grilled beef before slicing it against the grain.
- 4.Simmer reserved marinade with water or stock. Gradually whisk in rice flour until a smooth, thick sauce forms.
- 5.Finish beef with fine salt and serve with sauce and optional fried potatoes.
