Chicken Pork Adobo
This Chicken Pork Adobo has crisp potatoes, twice-fried meat, and a glossy vinegar-soy sauce.

Ingredients for Chicken Pork Adobo
- 500 g pork belly, cubed
- 600 g chicken nibbles
- 3 medium floury potatoes, quartered
- 1 whole garlic, minced
- 1/2 cup cane vinegar
- 1/2 cup Philippine soy sauce or Kikkoman soy sauce
- 1 tablespoon sugar
- Oil, for cooking
- 1 teaspoon cornstarch
- 4 bay leaves
- 2 tablespoons whole peppercorns
- 1/2 cup water
How to cook Chicken Pork Adobo
- 1.Deep-fry potatoes until golden; drain and set aside. Sauté garlic in oil over low heat until golden, then remove.
- 2.Fry pork belly until browned; remove. Fry chicken nibbles until browned; remove.
- 3.Return pork to the pot with water, vinegar, soy sauce, peppercorns, bay leaves, and sugar. Boil, then simmer 25 minutes until tender.
- 4.Add chicken and cook 10 minutes. Drain and reserve the cooking liquid.
- 5.Fry the drained meat over high heat until browned on the sides. Dissolve cornstarch in the cool reserved liquid and add it with potatoes.
- 6.Simmer 5 minutes until the sauce is glossy. Stir in crisp garlic and serve.
