Nilagang Litid ng Baka
Nilagang Litid ng Baka is a clean, peppery beef-tendon soup with potatoes and cabbage.

Ingredients for Nilagang Litid ng Baka
- 2 lbs beef shoulder bones with tendons
- ½ small cabbage, cored and quartered
- ½ tbsp whole peppercorns
- 2 large potatoes, peeled and quartered
- 1 medium onion, cut into wedges
- 2 tbsp fish sauce
- 6–8 cups water
- 2 cups beef broth, optional
How to cook Nilagang Litid ng Baka
- 1.Bring water and optional beef broth to a boil in a soup pot. Add peppercorns and onion; boil 5 minutes.
- 2.Add beef shoulder bones with tendons, cover, return to a boil, then cook over low-medium heat for 60–120 minutes until tendons are tender.
- 3.Add potatoes and cabbage; cook 5 minutes until beginning to soften.
- 4.Stir in fish sauce, adjusting to taste, and cook 5 minutes more. Serve hot with rice and spicy fish sauce with lemon if desired.
