Spanish Style Tuyo Sardines
Prepared tuyo is gently fried and packed in a tangy, aromatic olive-oil dressing.

Ingredients for Spanish Style Tuyo Sardines
- 12 to 15 tuyo (dried herring)
- 1 1/4 cups olive oil
- 1/3 cup white wine vinegar or red wine vinegar
- 2 cloves garlic, sliced
- 1/2 small carrot, sliced
- 2 bay leaves
- 1 tsp black peppercorns
- Salt, to taste
- Red chilies
- Oil, for frying
How to cook Spanish Style Tuyo Sardines
- 1.Gently fry tuyo in oil just until the scales loosen easily. Drain and cool completely.
- 2.Simmer olive oil, vinegar, garlic, bay leaves, peppercorns, and salt gently for 15 minutes.
- 3.Add carrot and red chilies to the dressing, then remove from heat and cool fully.
- 4.Remove the tuyo heads and scales. Pack fish into a clean, dry bottle and cover completely with cooled oil mixture.
- 5.Seal and serve the prepared tuyo with rice or bread.
