Biko Kalabasa
Biko Kalabasa is creamy coconut sticky rice folded through sweet mashed squash and topped with latik.

Ingredients for Biko Kalabasa
- 2 cups glutinous rice, washed and drained
- 1 cup canned coconut milk
- 1 cup water
- 2 pandan leaves, cut into 4 pieces
- 2 cups coconut milk
- 1 cup light brown sugar
- 2 cups squash, cubed
- 1 can coconut cream, for latik
- Oil, for greasing
How to cook Biko Kalabasa
- 1.Cook coconut cream over medium heat, stirring until oil separates and golden latik curds form; set aside.
- 2.Grease an 8-inch square pan or banana-leaf-lined bilao.
- 3.Simmer rice, 1 cup coconut milk, water, and pandan. Cover on low until liquid is absorbed and rice is nearly cooked.
- 4.Cook squash in 2 cups coconut milk until fork-tender. Mash, add brown sugar, and stir until thick.
- 5.Remove pandan, fold rice into squash mixture, and cook while stirring occasionally until fully cooked and absorbed.
- 6.Press into the pan, cool slightly, cut, top with latik, and serve.
