Palitaw are soft rice cakes coated in coconut, toasted sesame, and sugar.

Ingredients for Palitaw
2 1/2 cups glutinous rice flour
1 cup water, plus more for boiling
1/4 cup sesame seeds
1/2 cup white sugar
1 1/2 cups desiccated coconut
1/2 cup coconut milk
How to cook Palitaw
1.Toast sesame seeds in a dry nonstick pan, stirring until golden. Soak desiccated coconut in coconut milk until hydrated, then place coconut, sesame, and sugar on separate plates.
2.Bring about 2 litres water to a boil. Mix glutinous rice flour and 1 cup water into a soft, workable dough.
3.Flatten tablespoon portions of dough and boil about 6 at a time until they float.
4.Lift out with a slotted spoon; coat first in coconut, then sesame seeds, and finally sugar. Serve warm.
