Palapa
Palapa is a fragrant Maranao condiment of aromatics, chilies, and toasted coconut.

Ingredients for Palapa
- 1 cup white scallions, finely chopped
- 1/2 cup ginger, pounded
- 1/4 cup turmeric, grated
- 8 bird's-eye chilies, finely chopped
- 1 cup fresh coconut, grated and toasted
- 1/2 tsp salt
How to cook Palapa
- 1.Finely chop scallions and chilies, pound ginger, and grate turmeric.
- 2.Toast grated coconut in a dry pan for about 5 minutes, stirring constantly, until golden.
- 3.Combine scallions, ginger, turmeric, chilies, and toasted coconut in a large bowl.
- 4.Cook the mixture in a dry pan over medium-low heat for 10 to 12 minutes, stirring constantly, until dry and fragrant.
- 5.Stir in salt, cool completely, and refrigerate in a sterilized glass jar for up to 1 month.
