Pancit Udon
Chewy udon is stir-fried with pork, squid balls, and crisp vegetables in a soy-citrus sauce.

Ingredients for Pancit Udon
- 1 package (12.8 oz) udon noodles
- 10 squid balls, halved
- 1/2 small cabbage, chopped
- 1 medium carrot, julienned
- 1 medium yellow onion, sliced
- 1/4 lb pork, thinly sliced and chopped
- 1/2 cup soy sauce
- 1 lemon
- 1/4 cup chopped scallions
- 1 1/2 to 2 tbsp olive oil
- 3 tbsp cooking oil
- 3 cloves garlic, minced
- 8 to 10 cups water
- Salt
- Black pepper
How to cook Pancit Udon
- 1.Boil water in a deep pot. Cook udon for 10 to 12 minutes until tender but not soggy; drain and toss with olive oil.
- 2.Heat cooking oil in a wide wok over medium heat. Sauté onion and garlic until the onion softens.
- 3.Add pork and cook 2 minutes. Add squid balls and cook 2 minutes more.
- 4.Stir-fry carrot and cabbage for 3 minutes, then add the prepared udon.
- 5.Pour in soy sauce and lemon juice. Stir-fry 3 to 5 minutes, season with salt and pepper, and top with scallions.
