Cinniejen’s Puto de Ube
Cinniejen’s Puto de Ube is a soft purple yam rice cake that can be finished with salted egg or cheese.

Ingredients for Cinniejen’s Puto de Ube
- 2 cups uncooked rice
- 1 1/2 cups water
- 1 cup sugar
- 2 cups mashed ube (purple yam)
- 1/4 cup evaporated milk
- 4 tbsp baking powder
- 1/4 cup butter
- Cheese and/or salted egg (pulang itlog), optional topping
- Grated coconut, for serving
How to cook Cinniejen’s Puto de Ube
- 1.Wash rice, soak it in water overnight, then grind it finely. Boil scrubbed ube until soft, cool, peel, and mash.
- 2.Combine ground rice and mashed ube, then pass through a strainer to remove lumps.
- 3.Mix in sugar, butter, evaporated milk, and baking powder until thoroughly combined.
- 4.Fill puto molds two-thirds full. Steam over boiling water, cover, and top each with cheese and/or pulang itlog.
- 5.Steam until a toothpick comes out clean. Unmold and serve with grated coconut.
