Filipino Style Pot Roast in Creamy Mushroom Gravy
Tender beef slices are baked beneath a rich mushroom, carrot, and cream gravy.

Ingredients for Filipino Style Pot Roast in Creamy Mushroom Gravy
- 1 beef topside roast (1.5 to 2 kg)
- 1/4 cup flour
- 1/4 cup butter
- 3 cups beef stock
- 6 cloves garlic, minced
- 2 onions, chopped
- 2 tbsp oil
- Salt and freshly ground black pepper
- 3 carrots, sliced
- 250 g button mushrooms, sliced
- 1/2 cup cream
- 1/3 cup flour
- 1/3 cup butter
- 1 handful parsley, chopped
How to cook Filipino Style Pot Roast in Creamy Mushroom Gravy
- 1.Season beef, coat lightly with 1/4 cup flour, then brown all over in oil and 1/4 cup butter in a Dutch oven; set aside.
- 2.Sauté garlic and onions until soft. Return beef, add stock and enough water to reach two-thirds up the roast, then cover.
- 3.Bake at 180°C for 1 1/2 hours, until fork-tender. Rest the beef, slice it 1.5 cm thick, and reserve 3 cups strained cooking liquid.
- 4.Boil carrots until tender and drain. Over low heat, cook 1/3 cup butter and 1/3 cup flour into a roux.
- 5.Whisk in reserved liquid gradually, add cream, mushrooms, and carrots, then simmer 5 minutes; season with salt and pepper.
- 6.Layer sauce and beef in a baking dish, cover with remaining sauce, bake at 180°C for 25 minutes, and garnish with parsley.
