Puto Ube
Puto Ube is a soft steamed rice cake with earthy ube and a cheesy finish.

Ingredients for Puto Ube
- 1 cup rice flour
- 1/2 cup all-purpose flour
- 2 teaspoons cornstarch
- 1/2 cup sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup coconut milk
- 150 ml evaporated milk
- 100 g grated ube
- 1/2 teaspoon ube flavoring
- 2 tablespoons butter, melted
- Violet food gel, as needed
- Grated cheese, for topping
How to cook Puto Ube
- 1.Sift rice flour, all-purpose flour, cornstarch, sugar, baking powder, and salt into a bowl.
- 2.Add grated ube, coconut milk, evaporated milk, ube flavoring, melted butter, and food gel; stir only until combined.
- 3.Fill greased puto molds or silicone muffin cups three-quarters full.
- 4.Cover the steamer lid with cloth, then steam for 20 minutes, until a tester comes out clean.
- 5.Cool slightly, unmold, top with grated cheese, and serve.
