Habichuelas
Habichuelas is a hearty pork, chorizo, and white bean stew with a naturally thickened broth.

Ingredients for Habichuelas
- 4 cans (400 g each) white beans, drained
- 500 g pork shoulder, cut into small cubes
- 2 chorizos, sliced
- 3 cups water
- 2 cups pork stock
- 1 white onion, finely chopped
- 6 cloves garlic, minced
- 2 tomatoes, diced
- Freshly ground black pepper, to taste
- Fish sauce, to taste
- Oil, for cooking
How to cook Habichuelas
- 1.Heat oil in a pot over medium heat; sauté garlic and onion until softened. Add pork and brown on all sides.
- 2.Add chorizo and cook for 1 minute. Add tomatoes and cook until softened.
- 3.Pour in water and pork stock. Bring to a boil, reduce heat, and simmer for 30 minutes.
- 4.Mash the beans from one can into the stew and cook for 5 minutes until thickened.
- 5.Add remaining beans, bring back to a boil, season with fish sauce and pepper, then simmer 15 minutes, stirring occasionally.
