Fish Stew (Paksiw na Isda sa Gata)
Fish Stew (Paksiw na Isda sa Gata) is a rich coconut-vinegar fish dish with fried eggplant.

Ingredients for Fish Stew (Paksiw na Isda sa Gata)
- 4 lbs fish steaks
- 2 Chinese eggplants, sliced
- 1 thumb-sized ginger
- 3 cloves garlic
- 4 cups coconut milk
- 1 cup white vinegar
- 2 long green peppers, sliced
- 5 Thai chilli peppers
- 3 tbsp coarse sea salt
- 1 cup cooking oil
- 8 g Maggi Magic Sarap
- Fish sauce and ground black pepper, to taste
How to cook Fish Stew (Paksiw na Isda sa Gata)
- 1.Rub fish steaks with sea salt. Heat ¼ cup oil and fry eggplant 1½ minutes per side; remove.
- 2.Add remaining oil and fry fish steaks until browned on both sides; remove.
- 3.Leave about 3 tablespoons oil. Sauté onion for 1 minute, then garlic and ginger for 1½ minutes.
- 4.Return fish, add coconut milk, long green peppers, Thai chillies, and black pepper. Cover, boil, then simmer 4 minutes.
- 5.Add vinegar without stirring, cover, bring to a boil, and simmer until the sauce reduces close to half.
- 6.Return eggplant, season with fish sauce and Maggi Magic Sarap, then serve with rice.
