Linapwahan
Linapwahan is a deeply savory shrimp soup packed with dried fish and garden vegetables.

Ingredients for Linapwahan
- 250 g medium shrimps, with shells
- 1 daing na bisugo, roughly flaked
- 1/2 small butternut squash, cubed
- 1 small green papaya, cubed
- 6 bunch drumsticks (bunga ng malunggay), trimmed and sliced
- 1 large ampalaya, sliced
- 10 okra
- 1 bunch saluyot (jute leaves)
- 1 bunch moringa leaves (malunggay)
- 4 cups water
- 1 white onion, chopped
- 4 cloves garlic, minced
- 2 medium tomatoes, chopped
- Bagoong monamon
- Freshly ground black pepper
- Oil
How to cook Linapwahan
- 1.Shell shrimps and reserve meat. Briefly pulse shells with 2 cups water, strain through a fine sieve, and reserve the liquid.
- 2.Sauté garlic and onion in a little oil until soft, then add flaked daing na bisugo.
- 3.Add remaining water, shrimp-shell liquid, and tomatoes. Bring to a boil and simmer over low heat for 5 minutes.
- 4.Add squash, papaya, and drumsticks; simmer 5 minutes. Add okra and ampalaya; simmer 3 minutes.
- 5.Add shrimps, saluyot, and malunggay; simmer 2 minutes until shrimp is cooked. Season with bagoong monamon and pepper.
