Pritchon
Leftover lechon becomes crisp, fresh wraps with hoisin and cucumber.

Ingredients for Pritchon
- 750 g leftover lechon, meat and skin separated
- 15 Peking duck wrappers (Mandarin pancakes)
- 1/2 cup hoisin sauce
- 1 teaspoon warm water or sesame oil, optional
- 1 large cucumber, julienned
- 6 spring onions, cut into thin 2-inch strips
- Oil, for sautéing
How to cook Pritchon
- 1.Heat oven or air fryer to 190°C. Crisp lechon skin on a rack for 7 to 10 minutes in the oven or 3 to 5 minutes in the air fryer.
- 2.Rest skin briefly, then slice into thin strips.
- 3.Sauté lechon meat in a lightly oiled pan for 1 to 2 minutes until hot and lightly caramelized.
- 4.Steam wrappers for 2 to 3 minutes until pliable; keep them covered with a clean towel.
- 5.Loosen hoisin with warm water or sesame oil if desired. Spread on wrappers, add meat, skin, cucumber, and spring onions, then roll and serve.
