Deremen
Deremen is a dense, chewy coconut rice cake perfumed with pandan and finished with tender young coconut strips.

Ingredients for Deremen
- 2 cups deremen
- 200 ml coconut cream
- 400 ml coconut milk
- 2 cups sugar
- Coconut strips from 2 young coconuts
- 1 bunch pandan leaves
- 1/2 tsp salt
- 1 1/2 cups water
How to cook Deremen
- 1.Soak deremen in 1 1/2 cups water for 1 hour, then drain.
- 2.Combine coconut milk, sugar, pandan leaves, and salt in a nonstick wok over medium heat. Bring slowly to a boil, stirring constantly.
- 3.Add drained deremen and young coconut strips. Remove pandan leaves.
- 4.Lower heat to medium-low and stir continuously as the mixture thickens and dries.
- 5.Once the coconut cream is absorbed, keep stirring and cooking for 35–40 minutes until very sticky and dry.
- 6.Turn off the heat. Press into a banana-leaf-lined platter about 1 1/2 inches thick, then refrigerate before serving.
