Adobong Isaw (Small Intestine Adobo)

Adobong Isaw braises tender small intestines in a spicy, reduced soy-vinegar adobo sauce.

Ingredients for Adobong Isaw (Small Intestine Adobo)

  • 2 lb pig or cow small intestine
  • 1/2 cup soy sauce
  • 1/4 cup vinegar
  • 6 cloves garlic, crushed
  • 1/2 cup cooking rice wine
  • 1 tsp whole peppercorns
  • 6 dried Thai chillies
  • 4 1/2 cups water, divided
  • 3 tsp salt, divided
  • 4 dried bay leaves, divided
  • 1 tsp sugar
  • 3 tbsp cooking oil

How to cook Adobong Isaw (Small Intestine Adobo)

  1. 1.Bring 4 cups water to a boil with 2 teaspoons salt, rice wine, and 2 bay leaves. Add intestines and simmer until tender.
  2. 2.Drain intestines, let cool enough to handle, and cut into 2-inch lengths.
  3. 3.Heat oil in a wok over medium heat; sauté garlic and dried Thai chillies until fragrant.
  4. 4.Add intestines and cook 1 minute. Add peppercorns, remaining bay leaves, soy sauce, vinegar, and remaining 1/2 cup water.
  5. 5.Stir in remaining salt and sugar, cover, and simmer 15 minutes or until sauce has evaporated and coated the intestines.
  6. 6.Transfer to a serving plate and serve hot.
