Adobo
This Pork Adobo finishes tender braised pork with crisp potatoes and a glossy vinegar-soy sauce.

Ingredients for Adobo
- 800 g pork belly
- 3 medium Agria potatoes, quartered
- 1 whole garlic, minced
- 1/2 cup cane vinegar
- 1/2 cup Philippine soy sauce or Kikkoman
- 1 tbsp sugar
- Oil, for cooking
- 1 tsp cornstarch
- 4 bay leaves
- 2 tbsp whole peppercorns
- 1 cup water
How to cook Adobo
- 1.Deep-fry potatoes until golden, then drain. Over low heat, fry garlic in oil until golden and set it aside.
- 2.Fry pork belly until browned. Add water, vinegar, soy sauce, peppercorns, bay leaves, and sugar; boil, then simmer 1 hour until tender.
- 3.Drain the pork, reserving its braising liquid. Fry pork in clean hot oil over high heat until browned again.
- 4.Whisk cornstarch into the cooled reserved liquid, add it with fried potatoes to the pork, and simmer 5 minutes until glossy. Top with fried garlic.
