Filipino Carbonara
Filipino Carbonara is a creamy bacon and mushroom spaghetti made with chicken stock and Parmesan.

Ingredients for Filipino Carbonara
- 400 g spaghetti
- 250 g bacon, cut into 1/2-inch pieces
- 300 g button mushrooms, sliced
- 300 ml fresh cream
- 1 cup chicken stock
- 1/2 cup grated Parmesan cheese
- 1 tablespoon flour
- 2 tablespoons butter
- 4 garlic cloves, minced
- Salt, to taste
- Freshly ground black pepper, to taste
How to cook Filipino Carbonara
- 1.Cook spaghetti according to package directions, drain, and set aside.
- 2.Cook bacon over medium heat until crisp and rendered; remove bacon, leaving a little fat in the pan.
- 3.Add butter and garlic to the pan; sauté until aromatic, then cook mushrooms until tender.
- 4.Stir in flour for 1 minute, then gradually stir in chicken stock until smooth and thickened.
- 5.Add cream and simmer over very low heat for about 5 minutes, until slightly thick; stir in Parmesan and season.
- 6.Toss in spaghetti and bacon, simmer 2 minutes until coated, and serve.
