1/2 lb beef sirloin, sliced into thin strips
1 medium bitter gourd, cored and sliced
2 tablespoons soy sauce
2 tablespoons sherry or Shaoxing cooking wine
1 tablespoon cornstarch
3 tablespoons oyster sauce
1 teaspoon sesame oil
1/4 teaspoon ground black pepper
4 tablespoons cooking oil, divided
How to cook Beef in Oyster Sauce Stir Fry with Ampalaya
1.In a bowl, combine the beef, soy sauce, sherry or Shaoxing wine, sesame oil, and ground black pepper. Mix well, then add the cornstarch and toss until the beef is evenly coated.
2.Heat 3 tablespoons cooking oil in a wok or pan over high heat. Stir-fry the beef for 4 to 6 minutes, until browned, then transfer it to a clean plate.
3.Add the remaining 1 tablespoon oil to the same pan. Stir-fry the sliced ampalaya for about 2 minutes, keeping it crisp-tender.
4.Pour in the oyster sauce and stir-fry for 30 seconds to coat the ampalaya.
5.Return the beef to the pan and cook for 1 minute more, tossing everything together until hot and glossy. Transfer to a serving plate and serve with warm rice.
