Kaldereta with Peanut Butter
A rich, mildly spicy beef kaldereta thickened with peanut butter.

Ingredients for Kaldereta with Peanut Butter
- 1 kg beef ribs, stewing beef, or mutton, cubed
- 2 medium potatoes, cubed and deep-fried
- 2 medium carrots, cubed
- 1 large red capsicum, sliced
- 1 large can tomato puree
- 3 tbsp tomato paste
- 2 heaping tbsp peanut butter
- 2-4 red bird's-eye chilies, sliced
- 3 cups beef stock
- 3 bay leaves
- 1 red onion, chopped
- 6 cloves garlic, minced
- Ground black pepper and salt, to taste
- Oil
How to cook Kaldereta with Peanut Butter
- 1.Heat oil in a large pot and fry the garlic until golden. Strain and reserve as a topping.
- 2.Sauté the onion until soft, then add the meat and brown it on all sides.
- 3.Pour in the beef stock and add the bay leaves. Bring to a boil, add the tomato puree and carrots, then lower the heat.
- 4.Simmer for 1 1/2 hours, adding water as needed, until the meat is fork-tender.
- 5.Stir in the peanut butter and cook for 15 minutes until thick.
- 6.Add the tomato paste, chilies, capsicum, and fried potatoes. Simmer for 15 minutes, season, and sprinkle with the fried garlic.
