Lechon Belly Pork Adobo
Lechon belly makes a rich, peppery pork adobo with a reduced savory sauce.

Ingredients for Lechon Belly Pork Adobo
- 1 1/2 lb lechon belly, sliced
- 5 tablespoons soy sauce
- 3 cups beef broth
- 1/4 cup white vinegar
- 5 to 6 dried bay leaves
- 1 medium onion, chopped
- 4 to 5 cloves garlic, crushed
- 1 tablespoon whole peppercorns
- 1 teaspoon white sugar
- 3 tablespoons cooking oil
How to cook Lechon Belly Pork Adobo
- 1.Heat oil in a pot and sauté garlic and onion until fragrant, soft, and lightly browned.
- 2.Add lechon belly and sauté for 3 minutes.
- 3.Add soy sauce, beef broth, peppercorns, and bay leaves; cover and simmer over low heat for 45 to 50 minutes.
- 4.Pour in vinegar and bring to a boil, then stir in sugar.
- 5.Cook uncovered until only a little sauce remains; keep it saucy rather than dry, then serve with rice.
