Dinardaraan (Ilocano Dinuguan)
Dinardaraan is an Ilocano pork and blood stew with a bold vinegar finish and gentle chili heat.

Ingredients for Dinardaraan (Ilocano Dinuguan)
- 1 lb pork shoulder, cut into small cubes
- 3 long green chili peppers
- 3/4 cup pork blood
- 4 cloves garlic, minced
- 1 medium red onion, chopped
- 2 cups beef broth or water
- 1/4 cup white or apple cider vinegar
- 1/2 tsp ground black pepper
- Salt, to taste
- 3 tbsp cooking oil
How to cook Dinardaraan (Ilocano Dinuguan)
- 1.Heat oil in a pot and sauté garlic and onion until soft.
- 2.Add pork and black pepper; sauté until the pork turns medium brown.
- 3.Add broth or water, bring to a boil, reduce to low, and simmer covered for 25 to 30 minutes until tender.
- 4.Add vinegar and bring to a boil. Stir in green chilies and pork blood.
- 5.Cook 15 to 20 minutes, stirring, until the sauce thickens; season with salt and serve.
