Toasted Siopao

Toasted Siopao has soft baked buns filled with savory chicken, Hoisin sauce, and egg.

Ingredients for Toasted Siopao

  • 2 tbsp oil
  • 2 garlic cloves, minced
  • 1 medium onion, finely chopped
  • 1 lb chicken thigh fillet, finely diced
  • 2 cups water
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 3 to 4 bay leaves
  • 2 tbsp Hoisin sauce
  • 1/4 tsp pepper
  • 2 tbsp cornstarch
  • 1/2 cup water
  • 3 hard-boiled eggs, quartered
  • 1 tsp instant yeast
  • 2/3 cup lukewarm milk
  • 1/3 cup lukewarm water
  • 1/3 cup sugar
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 3 tbsp oil, plus more for coating

How to cook Toasted Siopao

  1. 1.Heat 2 tbsp oil over medium heat; brown chicken, then sauté garlic and onion. Add soy sauce, brown sugar, bay leaves, and 2 cups water; simmer 20 to 30 minutes until tender.
  2. 2.When sauce is reduced, stir in Hoisin and pepper. Mix cornstarch with 1/2 cup water, add, and simmer 1 to 2 minutes until thick.
  3. 3.Dissolve sugar in lukewarm milk and water. Stir in yeast and 3 tbsp oil, then mix in flour and baking powder. Knead 8 to 10 minutes until smooth and elastic.
  4. 4.Oil dough, cover, and rise 30 to 60 minutes until nearly doubled. Divide into 12 balls, rest 3 to 5 minutes, then roll each with thinner edges.
  5. 5.Fill each round with 1 tbsp chicken filling and an egg quarter. Seal, arrange on a baking sheet, cover, and rise 20 to 30 minutes.
  6. 6.Bake at 170°C for 12 to 15 minutes until golden. Cool briefly on a rack and serve warm.
