Pinais na Hipon
Pinais na Hipon gently steams shrimp and pork in banana-leaf parcels with a creamy coconut sauce.

Ingredients for Pinais na Hipon
- 500 g shrimp, shells reserved
- 1/4 cup water
- 250 g skinless pork belly, thinly sliced and chopped
- 1 cup grated young coconut meat
- 4 cloves garlic, minced
- 2 bird's-eye chilies, finely chopped
- 1 shallot, finely chopped
- Salt
- Freshly ground black pepper
- Banana leaves
- 2 cups coconut cream
- 1 cup coconut milk
How to cook Pinais na Hipon
- 1.Pound shrimp shells and heads with water, then strain through a fine sieve to collect shrimp juice.
- 2.Combine shrimp, pork belly, young coconut, garlic, chilies, shallot, shrimp juice, salt, and pepper.
- 3.Spoon 3 tablespoons filling onto each prepared banana leaf; fold into secure packets.
- 4.Arrange packets in one layer in a wide pan. Add coconut cream and coconut milk, cover, and cook over medium heat for 15 minutes.
- 5.Lift packets onto a platter and serve with the reserved coconut cooking sauce.
