Apan Apan is a tangy, savory kangkong dish enriched with tulapho and bagoong alamang.

Ingredients for Apan Apan
- Oil
- 8 cloves garlic, pounded
- 1 white onion, finely chopped
- 3 tablespoons bagoong alamang or guinamos
- 1/4 cup cane vinegar
- 2 bunches kangkong, leaves and tender stems only
- 3 cups tulapho
- 2 tablespoons soy sauce
- Salt, to taste
- Freshly ground black pepper
How to cook Apan Apan
- 1.Heat oil in a wok over medium heat. Sauté garlic and onion until the onion is soft.
- 2.Stir in bagoong alamang, add vinegar, and bring to a boil.
- 3.Add kangkong and tulapho, then toss with soy sauce for 2 minutes, until the greens wilt.
- 4.Season with salt if needed and black pepper, then serve immediately.
