Bagnet
Bagnet uses a double-fry method for remarkably crisp pork belly with a tender interior.

Ingredients for Bagnet
- 1 kg whole pork belly
- 1 whole garlic, pounded
- 1 tsp freshly ground black pepper
- Salt, to taste
- 4 bay leaves
- 1 tbsp baking powder
- Bagoong monamon, for serving
- Lemon wedges, for serving
- Oil, for frying
How to cook Bagnet
- 1.Put pork belly in a pot and add enough water to cover. Add garlic, pepper, salt, bay leaves, and baking powder.
- 2.Bring to a boil, skim off foam, then simmer for 1 hour 15 minutes. Cool completely.
- 3.Chill pork until cold, then cut into 2- to 3-inch-thick portions.
- 4.Heat deep-frying oil until near smoking, lower the heat, and fry pork for 10 minutes. Cool, then chill again until cold.
- 5.Fry the pork a second time for 5 minutes until deeply crisp. Serve with bagoong monamon and lemon wedges.
