Afritadang Baboy
A rich tomato-braised pork stew with tender vegetables and bright bell peppers.

Ingredients for Afritadang Baboy
- 2 lb pork shoulder, cubed
- 1 (8 oz) can tomato sauce
- 1 large potato, cubed
- 2 medium carrots, cubed
- 3 to 5 dried bay leaves
- 2 cups beef broth
- 1 small red bell pepper, sliced
- 1 small green bell pepper, sliced
- 1 medium onion, chopped
- 5 cloves garlic, crushed
- 3 tbsp cooking oil
- Salt and ground black pepper, to taste
How to cook Afritadang Baboy
- 1.Heat oil in a pot over medium heat; sauté garlic and onion until softened and fragrant.
- 2.Add pork and cook until lightly browned. Stir in tomato sauce, beef broth, and bay leaves; bring to a boil.
- 3.Cover and simmer over medium heat for about 45 minutes, adding broth if needed, until pork is tender.
- 4.Add potato and carrots; cook 5 to 8 minutes until beginning to soften.
- 5.Stir in bell peppers and cook 3 minutes. Season with salt and pepper, then serve hot.
