Pork Ginataan
Pork Ginataan slowly braises pork belly in spicy, creamy gata.

Ingredients for Pork Ginataan
- 1 1/2 lb pork belly, cubed
- 1 bunch fresh spinach
- 2 cups coconut milk (gata)
- 2 cups coconut cream (kakang gata)
- 10–12 Thai chili peppers
- 1 medium yellow onion, chopped
- 3 garlic cloves, crushed and chopped
- 2 thumbs ginger, thinly sliced
- 3 tbsp cooking oil
- 1/4 tsp ground black pepper
- 3 tbsp fish sauce (patis)
How to cook Pork Ginataan
- 1.Heat oil and sauté onion, garlic, and ginger until onion is soft and translucent.
- 2.Add pork and sauté until lightly browned.
- 3.Pour in coconut milk and coconut cream and bring to a boil.
- 4.Add Thai chilis, cover, and cook 45–60 minutes until pork is tender.
- 5.Add spinach, cover, and cook for 2 minutes.
- 6.Season with black pepper and patis, then serve.
