Kilawing Isda
Kilawing Isda cures fresh white fish in bright vinegar and citrus with aromatic vegetables.

Ingredients for Kilawing Isda
- 500 g white fish meat, such as grouper or snapper, cut into small cubes
- 1 cup cane vinegar
- 1/2 cup lemon juice
- 1/2 cup coconut milk (optional)
- 1 tablespoon thinly sliced ginger
- 1 red onion, finely chopped
- 2 cloves garlic, minced
- 2 green chillies, sliced
- 1 teaspoon salt
- Freshly ground black pepper, to taste
How to cook Kilawing Isda
- 1.Mix fish with 1/2 cup vinegar and soak for at least 5 minutes.
- 2.Drain fish in a colander and lightly squeeze out excess liquid.
- 3.Combine remaining vinegar, lemon juice, ginger, onion, garlic, chillies, coconut milk if using, salt, and black pepper.
- 4.Mix fish with the dressing, cover, and refrigerate for 4 to 6 hours. Serve chilled.
