Inihaw na Isda with Aligue Sauce

Ingredients for Inihaw na Isda with Aligue Sauce

  • 1 large snapper or tilapia, cleaned and gutted
  • Salt and freshly ground black pepper
  • 1 lemon, sliced
  • Banana leaves, optional
  • 1/3 cup crab fat (aligue)
  • 2 red chilli peppers, sliced
  • 1/4 cup cane vinegar or lemon juice
  • 1 tbsp sugar
  • 1 small red onion, chopped
  • 4 cloves garlic, minced
  • Salt
  • Freshly ground black pepper
  • Oil

How to cook Inihaw na Isda with Aligue Sauce

  1. 1.Prepare a charcoal grill. Season fish with salt and pepper, then fill the cavity with lemon slices.
  2. 2.Wrap fish in banana leaves if using. Grill 10 to 15 minutes per side, until opaque and flakes easily.
  3. 3.Meanwhile, heat oil over medium heat. Sauté onion and garlic for 2 to 3 minutes until softened.
  4. 4.Add aligue and stir constantly over low heat for 5 minutes. Add chillies, vinegar or lemon juice, sugar, salt, and pepper.
  5. 5.Cook 5 to 10 minutes until sauce thickens. Serve alongside or spooned over the grilled fish.
