Kikiam
These pork-and-prawn kikiam rolls are steamed first, then fried until their beancurd wrappers turn crisp.

Ingredients for Kikiam
- 700 g minced pork
- 300 g shelled prawns, finely chopped
- 1 large red onion, finely chopped
- 1 whole garlic, minced
- 1 large carrot, finely chopped
- ½ cup cornstarch
- 1 heaping tbsp five-spice powder
- 2 tbsp sugar
- Beancurd sheets
- Salt
- Oil
How to cook Kikiam
- 1.Process half the pork into a paste, then mix with remaining pork, prawns, onion, garlic, carrot, cornstarch, five-spice, sugar, and salt.
- 2.Place filling on beancurd sheets and roll tightly like spring rolls.
- 3.Steam the rolls for 15 minutes, then cool; refrigerate or freeze any not being fried immediately.
- 4.Heat enough oil for deep-frying. Fry thawed rolls over medium heat about 3 minutes, until crisp, then drain.
- 5.Slice and serve with sweet chili sauce.
