Paksing Demonyu
Paksing Demonyu is a fiery vinegar-braised vegetable dish with sweet, sharp, and bitter notes.

Ingredients for Paksing Demonyu
- 1–2 bitter melons (ampalaya), prepared and sliced
- 2–3 Asian eggplants, sliced
- 1 bunch string beans, cut into 2-inch pieces
- 1 tomato, sliced
- 1 large red onion, chopped
- 4 garlic cloves, minced
- 1 thumb-size piece ginger, minced
- 2 Scotch bonnet or bird's-eye chilies, finely chopped
- 2 tbsp brown sugar
- 3/4 cup cane vinegar
- 3/4 cup water
- Fish sauce, to taste
- Freshly ground black pepper, to taste
How to cook Paksing Demonyu
- 1.Generously salt ampalaya and rest 15 minutes. Rinse under cold water and drain well.
- 2.Sauté garlic, onion, ginger, and chilies in a wok until fragrant.
- 3.Combine vinegar, water, and brown sugar; bring to a boil, then add ampalaya, eggplant, string beans, and tomato.
- 4.Simmer 12–15 minutes, until vegetables are cooked. Season with fish sauce and black pepper before serving.
