Ginat-an nga Tambo
Ginat-an nga Tambo is a creamy coconut stew of crab, bamboo shoots, corn, and vegetables.

Ingredients for Ginat-an nga Tambo
- 600 g blue swimmer crabs
- 2 cups young bamboo shoots (tambo), thinly sliced diagonally
- 1 stalk jute leaves (tugabang)
- 400 g okra, sliced
- 1 cup fresh corn kernels
- 400 ml coconut milk
- 2 cups water
- 1 tablespoon Visayan shrimp paste (guinamos) or bagoong
- 4 cloves garlic, pounded
- salt, to taste
- freshly ground black pepper, to taste
How to cook Ginat-an nga Tambo
- 1.Boil bamboo shoots until tender, drain, and squeeze out excess moisture.
- 2.Bring water to a boil in a pot; add bamboo shoots and boil for 2 minutes.
- 3.Add okra, corn, coconut milk, and pounded garlic; simmer for 10 minutes.
- 4.Add crabs and guinamos or bagoong; simmer for 5 minutes until crabs are cooked through.
- 5.Add tugabang and cook for 1 minute until wilted; season with salt and pepper, then serve.
