Linutik
Linutik is a rustic coconut squash stew with pork, shrimp, and leafy malunggay.

Ingredients for Linutik
- 700 g butternut squash, peeled and chopped
- 1/2 cup malunggay leaves
- 200 g minced fatty pork
- 150 g shrimp, peeled and chopped
- 1 small red onion, chopped
- 4 cloves garlic, minced
- 400 ml coconut milk
- 2 cups water
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- Salt, to taste
- Freshly ground black pepper, to taste
- Oil, for cooking
How to cook Linutik
- 1.Heat oil over medium-high heat and brown the pork for 5 minutes.
- 2.Add onion and garlic; cook 2 minutes until the onion is translucent.
- 3.Add squash, shrimp, coconut milk, and water. Bring to a boil, then simmer over medium-low heat for 20 minutes until squash is tender.
- 4.Roughly mash the squash with a ladle, leaving some chunks. Stir in fish sauce, sugar, and pepper; simmer 5 minutes.
- 5.Add malunggay and cook 3 minutes until wilted. Season with salt and serve hot with rice.
