- 1 dozen okra
- 2 Asian eggplants
- 3 tablespoons bagoong monamon
- Juice of 1/2 lemon
How to cook Nilagang Okra at Inihaw na Talong
- 1.Bring a small pot of water to a boil over high heat, then cook the okra until tender but not mushy, about 4–6 minutes depending on size.
- 2.Drain the okra well and arrange it on a serving plate.
- 3.Heat a charcoal grill until hot. Grill the eggplants, turning as needed, until the skins are charred and the flesh is soft throughout.
- 4.Transfer the grilled eggplants to the plate with the okra. Peel them if desired, or leave them charred for smoky flavor.
- 5.In a small saucer, mix the bagoong monamon and lemon juice, then serve alongside the vegetables as a dipping sauce.
