Maskara
Maskara is a novelty bar dish of boiled whole pig head deep-fried until crisp.

Ingredients for Maskara
- 1 whole pig head, thoroughly cleaned
- Water, enough to cover
- Cooking oil, enough for deep-frying
- Beer, optional, for serving
How to cook Maskara
- 1.Place the cleaned whole pig head in a large pot, cover with water, and bring to a boil.
- 2.Simmer until the head is fully cooked and tender, then drain thoroughly and allow excess moisture to evaporate.
- 3.Heat enough oil for deep-frying. Carefully fry the pig head in batches if needed until the skin and exterior are crisp.
- 4.Drain well, chop or serve in portions, and serve hot as bar chow, optionally with beer.
