Aligue Fried Rice

Aligue Fried Rice turns leftover rice into a buttery seafood dish with taba ng talangka.

Ingredients for Aligue Fried Rice

  • 5 cups leftover rice
  • 8 shrimp
  • 10 mussels, removed from shells
  • 4 squid, sliced
  • 1/4 cup taba ng talangka (crab fat)
  • 1/4 lemon
  • 1 onion, minced
  • 5 cloves garlic, crushed
  • 3 tbsp butter, divided
  • 1/4 cup cooking oil, divided
  • Salt, to taste
  • Ground black pepper, to taste

How to cook Aligue Fried Rice

  1. 1.Heat 2 tablespoons oil. Cook shrimp and mussels 1 minute; add 1 1/2 tablespoons butter, then squid for 30 seconds. Season and reserve seafood with pan liquid.
  2. 2.Heat remaining oil in the same pan. Sauté garlic until browning, then add onion and cook until soft.
  3. 3.Add remaining butter and rice. Stir-fry 2 minutes, breaking apart clumps.
  4. 4.Fold in taba ng talangka until evenly distributed. Add lemon juice and reserved seafood liquid; stir-fry over high heat 1 to 2 minutes.
  5. 5.Season to taste, plate the rice, and top with the cooked seafood.
