Cansi
Cansi is a sour, aromatic beef-shank soup brightened with batwan, annatto, langka, and chillies.

Ingredients for Cansi
- 2 to 3 lb beef shanks
- 6 to 8 cups water, plus more as needed
- 1 tbsp rock salt
- 1 medium onion, sliced
- 1 stalk lemongrass, tied in a knot
- Salt, to taste
- 5 to 6 batwan
- 1 tbsp annatto seeds
- 3 cups unripe jackfruit (langka), sliced
- 3 green chillies
- 2 red chillies
How to cook Cansi
- 1.Cover beef shanks with water and rock salt in a pot; cover and bring to a rolling boil over high heat.
- 2.Drain, rinse the beef and pot, then return beef to the pot and add enough fresh water to cover.
- 3.Bring to a boil over low heat; add onion, lemongrass, and salt, then cover and simmer until fork-tender.
- 4.Add batwan, cover, and cook until soft.
- 5.Press annatto seeds in a fine sieve submerged in the broth to release their color.
- 6.Add langka and cook until tender; add green and red chillies, simmer 3 minutes, and serve piping hot.
